- 요약Agricultural production and food consumption systems play a critical role in shaping economic, environmental, and social outcomes worldwide. As these systems become increasingly complex, understanding the underlying behavioral, institutional, and economic forces that determine decisions within them has become essential for designing effective policies and interventions. This dissertation employs an industrial organization (IO) framework to analyze significant issues related to agriculture and food consumption, integrating theoretical modeling and empirical analysis of choice behavior. The IO perspective allows examination of how market structures, incentives, and strategic interactions influence the decisions of economic agents, particularly farmers and consumers, within these sectors.The research presented in this dissertation is organized into three chapters, each constituting an independent paper that collectively contributes to our understanding of agricultural production and food systems through the prism of industrial organization. Chapters One and Three focus primarily on farmers' adoption of conservation practices, investigating the role of economic incentives in motivating these decisions beyond traditional environmental benefits. Chapter Two shifts the focus to consumer behavior in food markets, applying discrete choice modeling to better understand demand patterns and preferences.Chapter One lays the theoretical foundation by developing an industrial organization model tailored to agricultural decision-making contexts. The chapter addresses the question of how farmers respond to different incentive structures when deciding whether to adopt conservation practices. The research addresses the ex-ante market equilibrium between a monopsonistic carbon initiative and heterogeneous farmers implementing no-till and cover crops under two pricing schemes: 1) practice-based payments and 2) output-based payments.Chapter Two shifts focus from producers to consumers, employing discrete choice models to analyze egg demand. It provides the first comprehensive national-level analysis of consumer demand for specialty eggs in the United States, analyzing the economic impacts of battery cage bans across eight states on consumer's surplus. Using Nielsen Consumer Panel data from 2014-2020 and Urner-Barry wholesale prices as a cost-shifter, the research employs a nested logit model to estimate consumer preferences and analyzes willingness to pay for eggs produced under different housing systems, including cage-free, free-range, and organic products. The research addresses a critical gap in existing literature by expanding the scope to a national level, which has been limited to state-specific analyses, particularly California. The market level analysis captures the unique substitution patterns in the egg market, where consumers likely substitute between different egg products but rarely switch to alternative products, such as meats and other protein sources, reflecting eggs' functional uniqueness in cooking and their role as an affordable protein source.Chapter Three returns to the issue of conservation practice adoption but emphasizes empirical analysis through a discrete choice model. I analyze farmers' willingness to adopt cover crops and perennial grasses for RNG production in Iowa and Missouri. Compared to existing payment for ecosystem services, RNG production requires harvesting cover crops and grass, and pays farmers based on the amount of biomass production. I conduct the contingent valuation survey to measure willingness to adopt cover crops and perennial grasses and to analyze the cost-effectiveness of the payment for these practices through RNG production. Furthermore, I address farmers' subfield productivity and risk attitudes to adopt new practices, which require a change in current cropland use at the subfield level, and analyze how the risk attitudes affect the WTA. The methodology employs a contingent valuation survey of farmers in Iowa and Missouri, incorporating a double-hurdle model. Taken together, these chapters advance the understanding of farmers' and egg consumers' decision making through a coherent industrial organization lens. The combination of theoretical development and empirical investigation allows for a comprehensive assessment of behavior in both production and consumption.
